I know I’m not the only one who finds Sundays to be a bit rough. Whether we’re sad our fun weekend is coming to an end, nervous about the work week ahead, or a little bit of both, Sunday evenings can be quite a let down after the high of the two previous days.
In order to keep some of those “Sunday Scaries” at bay, I try to fill my Sunday evenings with positive and productive things that will improve my week. A big part of this is meal prep. I have been a big fan of meal prep for a while as a great way to save money and eat healthy throughout the week. Lately, I’ve been experimenting with new recipes (see some of my favorites here), but this week, I decided to try a creation of my own and it turned out so well, I decided to share it! This salad is easy and cheap to prepare, vegetable and protein packed, and super flavorful. I’ve been enjoying it every day this week for lunch, and I’m still not sick of it!
I am a pescetarian (aka a vegetarian that eats fish), but I cook a lot of vegan meals, like this one. If you’re a carnivore, feel free to substitute the vegan beef-less ‘ground beef’ for a lean meat like chicken or turkey. As I mentioned above, this recipe is great for meal prep, but you can also make a big batch for your family and friends to enjoy for a meal, or make a smaller batch for one or two. Oh, and feel free to add chips to complete the taco salad feel 😉
